One of the best cheeses in my opinion will forever be borgonzola! This is like if Brie and blue cheese had a baby! It is absolutely magical! I officially sold my condo yesterday and I am in the middle of packing up and moving so I had the ultimate girl dinner tonight! I pickled some fresh cornichon cucumbers with dill and horseradish then I baked the borgonzola! I had some blue cheese shortbread cookies, sourdough rye crackers, truffle salami, and jalapeño pickled mustard seeds to serve with it!
