Easy and filling with some homemade remoulade sauce on the side. 2 cups all purpose flour Season salt or dry rub 1/2 cup cornmeal 1 tablespoon baking powder 1 cup of beer 1/2 cup red pepper 1/2 cup green pepper 3/4 cup onion 1 tablespoon minced garlic 2 tablespoons pickled jalapeños, chopped 1 egg 1/4 cup corn relish (or plain corn) 1 1/2 - 2 cups alligator (or any firm fleshed fish) Mix together all ingredients until combined.
